I seem to have a lot of patience with tapping my screen to try to get the right focus and taking about 15 different shots til I get one I like. . .All great pictures.
I do have an S5 phone, and have not come to close to this kind of picture (I admit I don't really try though either)
Personally, I've had good luck processing files on the phone (rather than uploading them and then editing) using the Aviary app (https://www.aviary.com/) So all pics will remain at their highest possible resolution, and it's pretty simple to use,
As for a new camera, if you are looking DSLR, I would suggest taking a look at the Sony range of cameras, unless you have a hoard of (or access to) a bunch of lenses for a different camera system. Assuming you want to take pictures of fish, a good macro lens would be a good investment.
Ah the tip on the lens is great, thanks! I may start my hunt by looking for a good macro lens and then choosing the camera around that. Planning on spending enough to get a camera that will last me a while. Every time I have money set aside someone just has to get married and requires me to fly from the UK to the states Kidding, but seriously, it keeps happening. So, I'm looking at spending around the range of a return flight But for now the clarity of the phone shots are keeping me happy. Until the lighting becomes unsatisfactory. . .I don't know gear, other than if you are going for a system with interchangeable lenses the lens choice comes first, then you match a camera body to that lens. There is a bird photographer that uses one brand of camera body because that is what works on his choice of good glass. The kit lens is enough to get you taking pictures but doesn't compare in quality to what you can shop around and buy. Depends on what you have to spend though.
I have studied composition, and that is why I sound like I know something. Money gets spent on other things besides photography so I don't pay much attention to what's out there for cameras. My current camera is a basic full control model (Canon powershot sx120 is). Your phone probably has more megapixels than my camera.
