I added a big crayfish to my 75 gallon tank and he won't eat the dead feeder fish left over from my predator fish.

He eats the live feeder fish too like rosy red fathead minnows.

I know they love live fish but I thought they ate dead fish too?

They will eat dead fish, but they will much rather take live over dead. If they have a better, more reliable, more nutritious source of food that's not too hard to obtain, they'll take that.

I guess that's why I see crayfish kept in feeder fish tanks at pet stores.

They're usually contaminants from the rearing ponds; moreover, in many cases, they (if large enough) do manage to inflict losses on the feeders with which they are housed.
