Using EcoComplete Gravel. I'm planted, so I want somewhere around 2 or 3" I think.

I think about 75lbs would be enough for 75g. Just go to Home Depot/Lowes and get 2 50lb bags of pea gravel for about $3-4 each.

i had a 55 gallon and i used 3 bags of eco complete. i think it has the same footprint as the 75 gallon.. so that should be about right.

A standard 75g is 5-6" wider front to back than a standard 55g.

To get 2 to 3 inches takes a little more than the usual pound per gallon. You will likely find that 100 pounds is just enough and to get close to 3 inches would take a little more like another 25 pounds.
All these numbers are approximate. Try adding the first 75 to 100 pounds and see how you like it. Be ready to go back for more if it looks too shallow to you.

where are you located?
i've got 40 lbs of eco complete i'm trying to get rid of.
