What, in your opinion, is the minimum size for a tank used to breed a pair of angelfish, and allow the fry to remain with them until they are dime sized?

I'd say 20 gallon minimum for a pair. In a small tank such as a 20 I'd say remove the eggs/wrigglers/fry to a separate 10+++gallon tank. I start with a 10. It's a managable size but as they grow they need a bigger tank. If most fry survive for you I'd go right away and put them in a 50 gallon. Moving them from tank to tank can be stressful.

Answering your real Q's:
To keep them until dime size is a little unrealistic. That is if you want all the spawns the adults have alive and well. In about 80-82 degrees it takes angels about 90 days to reach dime size. By then your angels could have 3 spawns going at once. The bigger fry picking at the new fry and the adults guarding the new fry and eating the old fry. If you want most of the batches to survive I'd do 50gallon minimum. 75 gallons for more space. More places for the fry not to encounter each other.

I would think a 55g would be scraping by on the bare minimum. 75g would be better I think. Just my 2c.

I have all my breeders in 20H's and they work fine. If you left the fry to dime size in the breeder tank - you would lose the adults - the babies will pick at the parents and can kill them if left too long (not to mention the water quality issues). I leave the fry in with the parents until they take on an "angel" shape - then move them to an empty 20. Depending on the size of the spawn - you might need 3 55's to grow them out to dimes or bigger - I have had over 1,000 eggs to wigglers from one pair - average would be around 400. Plan on grow out space if you plan to breed angels - you will need it.
