we just added a couple of plants to our freshwater tank which is a 20 gallon just was wondering if there was any rule as to how many plants you can put in a tank

I don't think so... I think as long as:
- You're providing enough light, CO2, nutrients for the plants' needs
- The plants are spaced far enough apart that light can reach their leaves and they have room to grow larger
- The fish have enough room to swim around freely
you can plant the tank to your heart's content.

Nope. Don't think you can have too many plants in a tank. I think what affects your plants most is the lighting and nutrients. What is your set up? Do you have special lighting and CO2, or is it a low light/low maintenance tank?
