Do shrimp eat driftwood?

I have some shrimp in my 20 gallon tank--not sure what kind, they were sold as feeders. Yesterday I caught a few and moved them to my 55, where I have a lot of driftwood. Today, I noticed that the shrimp have a distinct brownish-reddish tinge. Are they eating driftwood?

On that note, what should I be feeding them anyway? The feeders in my 20 really just appeared out of nowhere one day. My husband had a nice little colony in his 10, before they were killed by accident when we used nitrofurazone to treat one of his fish. The shrimp must have hitchhiked somehow from his 10 to my 20, sometime before the nitrofurazone issue. But anyway, my husband had plenty of fish to feed, so his shrimp had plenty of leftovers. All I have are bettas in the 20 and 55. Should I give the shrimp sinking pellets or veggies? I don't like the way sinking pellets break down and get messy, so would just veggies be ok?

P.S. They've been living off nothing but tank algae for months now, so I'm not sure whether I even need to supplement.
 
Are they Ghost shrimp? They will eat anything. Mine pick at my driftwood all the time. They also eat baby snails, any leftover food, algea and everything else. LOL I love my ghost shrimp. They are the only ones of all my shrimp that notice me when I walk up to my tank. When I am working in my tank they like to walk all over my hands and arms so I have to be extra careful that my hands and arms are soap and lotion free.
 
Yeah, my husband's use to be really friendly and walk on his hands, too, but these seem to be traumatized from living with the bettas. They're pretty skittish :)

And I do think they may be ghost shrimp. Maybe I'll go make them some zucchini. And, I'm glad to hear that they eat snails--I've got plenty.
