Did you add any plants or inverts? Ick does not have a dormant stage, it can't survive without a host for long.

What is far more likely is you added something other than fish but there was ick contaminated water on/with the plant/invert that got into your tank or that one or more of your fish had ick but not a noticeable amount or it was in a place you could not see.
